CIORBA DE BURTA - FLACZKI PO RUMUŃSKU / ROMANIAN STYLE TRIPE



CIORBǍ DE BURTǍ


Do lata jeszcze daleko, a mnie już tęskno do słońca i wakacyjnych podróży. Na razie pozostaje mi tylko gorąca czekolada, ciepły kocyk i zdjęcia z wakacji. No, może nie tylko to, mogę jeszcze ugotować jakieś przysmaki poznane w podróży. 
Jakiś czas temu obiecałem pewnym żarłokom, że zrobię rumuńską wersję flaczków, która zaskoczyła mnie  w przepięknej Sighisoarze i od dłuższego czasu chciałam przygotować ten przysmak w domu. Nazywa się 'ciorba de burta' i jest naprawdę świetny!

Of course, summer shall come, but no sooner than in a few months and I already miss the sun and holiday travels. For now I'm left with hot chocolate, warm blanket and pictures from holidays. Well, maybe not only with that, I can always cook something that I tried while travelling. 
Some  time ago, I promised certain gourmands, that I would make a Romanian version of tripe that had surprised me in beautiful town of Sighisoara and I've wanted to prepare that delicacy at home. 
It's called 'ciorba de burta' and it's really great! 

SKŁADNIKI:




  • 1 kg flaczków (ja kupiłam już ugotowane i pokrojone - tak sobie ułatwiłam życie :)
  • 1/2 kg pręgi wołowej (w oryginalnym przepisie była gicz cielęca, ale w mojej wiosce niestety nie udało mi się jej zdobyć bez wcześniejszego zamawiania :)
  • seler
  • pietruszka (korzeń)
  • cebula
  • 2 marchewki
  • czosnek
  • 5 żółtek
  • 500g słodkiej gęstej śmietany
  • ok.1/3 szklanki białego octu winnego
  • sól i pieprz
  • ziele angielskie
  • liść laurowy
  • łyżeczka cukru
  • majeranek
  • łyżka oliwy z oliwek

PRZYGOTOWANIE:

Czas przygotowania zależy w dużej mierze od tego jakie kupimy flaczki. Jeśli kupimy surowe - trzeba je dość długo gotować, zmieniając wodę. Ja poszłam trochę na łatwiznę - kupiłam już ugotowane - dlatego wystarczyło opłukać je dobrze i obgotować jakieś 20 minut, odcedzić i przelać zimną wodą.

Następnie w osobnym garnku gotujemy pręgę z flaczkami, pietruszką, selerem, solą i pieprzem, liściem laurowym (3-4) i zielem angielskim (4-5) oraz wyciśniętymi ząbkami czosnku (ja dałam 3) aż mięso zmięknie.

  • 1 kg tripe (I bought already cooked and cut tripe - to make my life easier :)
  • 1/2 kg beef shank (in the original recipe there was beef shank, but in my village it's not gonna happen without making special orders in advance :)
  • celery root
  • parsley root
  • onion
  • 2 carrots
  • garlic
  • 5 egg yolks
  • 500g sweet thick cream
  • about 1/3 cup white wine vinegar
  • salt and pepper
  • allspice
  • bay leaf1 tsp sugar
  • 1 tbsp olive oil

METHOD:

Preparation time depends on tripe. If you buy raw tripe- you'll need to cook it for quite a long time, changing water a few times, until the tripe is soft. I made it easeier on myself - got the already cooked version - that's why I just rinsed it with cold water and cooked for about 20 minutes, drained and rinsed with cold water again. 

Then, in a separate pot, you need to cook shank with tripe, vegetables and crashed garlic cloves, and salt and pepper, allspice  (4-5) and bay leaves (2-3) (I used three) untill the meat gets soft. 
 



W tym czasie ucieramy na marchewkę na tarce o grubych oczkach i obsmażamy na łyżce oliwy.

Odcedzamy mięso - pozostawiamy wywar i mięso, resztę wyrzucamy. Mięso trzeba poszarpać na drobne kawałki.

W osobnym garnku roztrzepujemy żółtka ze śmietaną a następnie po łyżce wazowej dodajemy gorącego wywaru, cały czas mieszając.

Meanwhile, we can grate carrots on a thick grate and fry it a bit on some olive oil. 

Drain the meat - leave the broth and get rid of the veggies. Tear meat into small pieces.

In a separate pot whisk egg yolks with cream and then add hot broth - one soup-ladle at a time, whisking at the same time. 
 


Kiedy już dodamy cały wywar, dorzucamy flaczki i postrzępione mięso ...

Once you've added the whole broth, add tripe and meat ...  


 ... oraz podsmażoną marchewkę i majeranek.

... and fried carrot and marjoram.  


Podgrzewamy, ale nie zagotowujemy. Na koniec doprawiamy octem, dodajemy łyżeczkę cukru i do smaku sól i pieprz.

Heat but don't boil it. At the end, add vinegar, tsp. of sugar and salt and pepper to taste.   



Świetnie smakują z chrupiącymi bułeczkami lub świeżym chlebem.

MEKSYKAŃSKIE KOSZYCZKI / MEXICAN BASKETS

Nowa odsłona moich ulubionych żołądków drobiowych - na ostro, ze sporą ilością warzyw i podane w nieco odmiennej formie. Smakuje wyśmienicie, no i jest efekt 'wow!' :)

Brand new version of my favourite turkey stomachs - spicy this time, with quite an amount of veggies, served in a totally different way - tastes great and the 'wow' effect is there too! :) 


Składniki:
  • duże tortille (z jednej będą 4 koszyczki)
  • 200g żołądków indyczych
  • cebula
  • 2 puszki pomidorów
  • papryka zielona
  • papryczka chilli
  • 1 puszka fasolki czerwonej
  • mała puszka kukurydzy
  • garść oliwek zielonych
  • 2 awokado
  • sól i pieprz
  • liść laurowy
  • ziele angielskie
  • pieprz młotkowany z kolędrą
  • świeża kolendra
Przygotowanie:

Tortille kroimy na 4 części i każdą z nich wkładamy w zagłębienie formy do muffinek formując koszyczek.

Ingredients:
  • big tortillas (one makes 4 baskets)
  • 200g turkey stomachs
  • onion
  • 2 cans of tomatoes
  • green bell pepper
  • chilli pepper
  • 1 can of red beans
  • small can of corn
  • handfull of green olives
  • 2 avocado
  • salt and pepper
  • bay leaf
  • all spice
  • crushed black pepper with coriander
  • fresh coriander
Method:


Cut tortillas into 4 parts and place each part into a muffin cup of a muffin tin forming a small basket.
 


Wkładamy do nagrzanego piekarnika (160 stopni) na około 10-15 minut, aż się lekko przyrumienią i zesztywnieją.

Put the tin with tortillas into the preheated oven (160 degrees Celsius- 320 F) for about 10-15 minutes, untill they get golden on the edges and get harder.  


Żołądki myjemy i gotujemy z zielem angielskim, liściem laurowym i sporą ilością pieprzu młotkowanego z kolendrą, aż do miękkości. Odcedzamy i pozostawiamy do ostygnięcia, a następnie kroimy w centymetrową kostkę.
Cebulkę kroimy w kostkę i obsmażamy na odrobinie oliwy. Dodajemy pomidory, pokrojoną drobno papryczkę chilli i dusimy na wolnym ogniu. 
Dodajemy pokrojone żołądki i dusimy, aż sos zacznie gęstnieć. Następnie dodajemy kolejno - pokrojoną w kostkę paprykę, drobniutko pokrojone oliwki, kukurydzę i fasolkę.
Na sam koniec dorzucamy pokrojone w kostkę awokado i posiekaną drobno kolendrę.

Napełniamy koszyczki do pełna i układamy ładnie na deseczce albo jakimś innym ładnym naczyniu.

Clean and cook stomachs with all spice, bay leaf and quite an amount of crushed pepper with coriander until they are soft. Strain and set aside to cool, then cut into 1cm pieces.
Dice the onion and fry with a bit of olive oil. Add tomatoes, finely chopped chilli pepper and simmer for a while. 
Add stomachs  and simmer untill it gets thicker. Then add, in this order, diced pepper, finely chopped olives, corn and beans.
At the end, add diced avocado and finely chopped green coriander.

Fill up the tortilla baskets and place them on a nice cutting board or some other pretty dish.

GULASZ Z ŻOŁĄDKÓW INDYCZYCH / TURKEY STOMACHS GOULASH

Nie każdy lubi podroby, ale każdy powinien najpierw spróbować. Ja uwielbiam szczególnie żołądki, które pamiętam z dzieciństwa w sosie chrzanowym - PYCHA! Tym razem, przygotowałam je troszkę inaczej i muszę przyznać, że wyszły świetne!

Not everyone likes offal, but everyone should try before giving any opiniopn. I especially like stomachs, which I remember from my childhood served in horseraddish sauce - YUMMY! This time, I prepared them differently and I must say it worked uut just fine! 


Przygotowałam gulasz z cukiniami, bakłażanem i kabaczkiem w sosie pomidorowym oraz purée z ziemniaków z topinamburem.

Podstawowe składniki to:

I prepared goulash with zucchinis, aubergine and cucurbit in tomato sauce and potatoes and topinambour purée.

Basic ingredients are: 

  • 3/4 kg żołądków indyczych (mogą być i kurze, ale ja wolę indycze)
  • 3/4 cukinii zielonej
  • 3/4 cukinii żółtej
  • 3/4 kabaczka
  • 3/4 bakłażana
  • 1 duża cebula biała
  • 3-4  ząbki czosnku
  • liść laurowy
  • ziele angielskie
  • pieprz młotkowany z kolendrą
  • sól
  • puszka pomidorów
  • 1 szkl. przecieru pomidorowego
  • oliwa z oliwek
  • 1 łyżka miodu (ja użyłam gryczanego)
PURÉE
  • 2 spore ziemniaki
  • 3-4 topinabury
  • łyżka masła
  • 2 łyżki śmietany 
Najpierw oczyszczamy żołądki i gotujemy do miękkości w lekko osolonej wodzie z zielem angielskim, liśćmi laurowymi i sporą ilością młotkowanego pieprzu z kolendrą. Duża ilość przypraw spowoduje, że będą aromatyczne, a wywar można zostawić na jakąś szybką zupkę.

  • 3/4 kg turkey stomachs (chicken ones are ok too, but I prefer turkey ones)
  • 3/4 green zucchini
  • 3/4 yellow zucchini
  • 3/4 cucurbit
  • 3/4 aubergine
  • 1 big white onion
  • 3-4  cloves of garlic
  • bay leaves
  • all spice
  • crushed black pepper with coriander
  • salt
  • can of tomatoes
  • 1 cup tomato purée
  • olive oil
  • 1 tbsp. honey (I used buckwheat honey)
PURÉE
  • 2 quite big potatoes
  • 3-4 topinambours
  • 1 tbsp. butter
  • 2 tbsp. thick cream
First, clean the stomachs and cook them in lightly salted water with all spice, bay leaves and quite an amount of crushed pepper with coriander. The spices make the stomachs aromatic and the broth can be used later as the beginning of any quick soup.


Kiedy żołądki się gotują, kroimy w grubą (ok 2cm) kostkę warzywa. Ja staram się wybierać niezbyt duże, żeby nie wycinać gąbczastych środków.

While the stomachs are cooking, dice the vegetables into about 2-cm cubes. I try to choose those not too big, so I don't have to cut out spongy inside part of them. 



Żołądki odcedzamy i kroimy na mniejsze kawałki wielkości kęsa.


Na patelni podsmażamy lekko na oliwie pokrojoną w półkrążki cebulkę i posiekany drobno czosnek.

Strain the stomachs and cut them into smaller bite-size pieces.

On a frying pan fry onion chopped into half-rings  and finely chopped garlic on some olive oil.


Dodajemy puszkę pomidorów i szklankę przecieru pomidorowego (płynnego - nie chodzi o nasz gęsty przecier).

Add tomatoes and tomato purée (not the thick Polish type, though).


Następnie dorzucamy pokrojone żołądki ...

Then, add cut stomachs ...


... i pokrojone warzywa. Dodajemy łyżkę lub dwie miodu i dusimy aż warzywa lekko zmiękną (ale bez przesady - smaczniejsze są takie chrupiące).  Przyprawiamy jeszcze solą i młotkowanym pieprzem do smaku i gotowe.

Podawać można z kasza, ryżem, ziemniakami, czy jak tam kto lubi. Ja zrobiłam purée z ziemniaków z topinamburem. Ugotowałam ziemniaki i topinambur w mundurkach (topinambur gotuje się nieco dłużej) a następnie obrałam i zmiksowałam na gładko z masełkiem, odrobiną śmietany oraz soli i pieprzu do smaku.

... and diced vegetebles. Add a tablespoon of honey and simmer until the veggies get softer (but not too much - they're much better when crunchy). Add some salt and crushed pepper to taste and it's ready to serve.

We can serve it with groats, rice, potatoes or whatever you wish. I made potatoes and  topinambour purée. I cooked potatoes and topinambours without peeling them (topinambour cooks longer) and then peeled them and blended with butter, some cream, salt and pepper to taste.


Wiem, że nie wszyscy lubią zieleninę. Ja jednak należę to klanu królików i hojnie posypałam mój gulasz posiekaną pietruchą - pachnące pyszności- nic tylko wsuwać!!!!!
Naprawdę łatwy i dość szybki obiad! Polecam!

I know that not everyone likes parsley but I'm from the rabbits clan so I added generous amount of freshly cut parsley to garnish my goulash - smells wonderful - just tuck in!!!!
